A light and refreshing pasta dish featuring delicate angel hair pasta, a zesty lemon sauce, and crisp sunflower greens.

  • 12 ounces angel hair pasta
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup vegetable broth
  • 1/2 cup grated Parmesan cheese (optional)
  • 2 cups sunflower greens
  • Salt and black pepper to taste

Instructions

  1. Cook angel hair pasta according to package directions until al dente. Drain and set aside.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  3. Stir in lemon juice, lemon zest, red pepper flakes, and vegetable broth. Bring to a simmer and cook for 2-3 minutes, allowing the flavors to meld.
  4. Add the cooked angel hair pasta to the skillet with the sauce. Toss to coat evenly.
  5. If using, stir in the Parmesan cheese until melted and combined.
  6. Remove from heat and gently fold in the sunflower greens.
  7. Season with salt and black pepper to taste. Serve immediately.

Notes

  • For a richer sauce, add a tablespoon of butter with the lemon juice.
  • You can substitute other tender greens like arugula or spinach for sunflower greens.
  • Adjust the amount of red pepper flakes to your spice preference.
