  • 1 tablespoon sesame oil
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 8 cups vegetable broth
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon fresh ginger, grated
  • 12 frozen potstickers (pork or chicken)
  • 2 cups chopped bok choy
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons sliced green onions for garnish

Instructions

  1. Heat sesame oil in a large pot or Dutch oven over medium heat.
  2. Add carrots, celery, and onion. Sauté for 5-7 minutes until softened.
  3. Stir in minced garlic. Cook for 1 minute until fragrant.
  4. Pour in vegetable broth, soy sauce, rice vinegar, and grated ginger. Bring to a boil.
  5. Reduce heat to medium-low. Add frozen potstickers. Simmer for 5-7 minutes, or until potstickers are cooked through.
  6. Stir in bok choy. Cook for 2-3 minutes until wilted.
  7. Remove from heat. Stir in fresh cilantro.
  8. Ladle soup into bowls. Garnish with sliced green onions. Serve immediately.

Notes

  • You can use any type of frozen potstickers you prefer.
  • Adjust the amount of soy sauce and rice vinegar to your taste.
