A fresh and flavorful open-faced sandwich featuring roasted asparagus, creamy ricotta, and a hint of mint.

  • 1 bunch asparagus, trimmed
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 4 slices rustic bread
  • 1/2 cup ricotta cheese
  • 2 tablespoons fresh mint, chopped
  • 1 teaspoon lemon zest
  • Red pepper flakes, optional, for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss asparagus with olive oil, salt, and pepper on a baking sheet. Roast for 8-10 minutes, or until tender-crisp.
  3. Toast the bread slices until golden.
  4. In a small bowl, mix ricotta cheese with chopped mint and lemon zest.
  5. Spread the ricotta mixture generously on each toasted bread slice.
  6. Arrange the roasted asparagus on top of the ricotta.
  7. Garnish with red pepper flakes, if desired, and serve immediately.
