This recipe combines the comforting flavors of banana bread with the satisfying crunch of granola. It’s perfect for a healthy breakfast or snack.

  • 2 ripe bananas, mashed
  • 2 cups rolled oats
  • 1/2 cup chopped walnuts
  • 1/4 cup maple syrup
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt

Instructions

  1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine mashed bananas, rolled oats, chopped walnuts, maple syrup, melted coconut oil, vanilla extract, cinnamon, nutmeg, and salt. Mix until well combined.
  3. Spread the granola mixture evenly onto the prepared baking sheet.
  4. Bake for 30-40 minutes, stirring halfway through, until golden brown and crispy.
  5. Let the granola cool completely on the baking sheet before storing.
