  • 1 cup fresh spinach, packed
  • 1/2 cup milk
  • 1 large egg

  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • Cooking oil or butter for greasing the pan

Instructions

  1. In a blender, combine the mashed banana, spinach, milk, egg, and vanilla extract. Blend until smooth and no spinach pieces are visible.
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are fine.
  4. Heat a lightly oiled or buttered griddle or non-stick pan over medium heat.
  5. Pour about 1/4 cup of batter per pancake onto the hot griddle.
  6. Cook for 2-3 minutes per side, or until golden brown and cooked through.
