Ingredients
Scale
1 pound flank steak, thinly sliced against the grain
1 head broccoli, cut into florets
2 tablespoons vegetable oil, divided
1/2 cup beef broth
1/4 cup soy sauce
2 tablespoons brown sugar
1 tablespoon cornstarch
1 tablespoon rice vinegar
1 teaspoon grated fresh ginger
2 cloves garlic, minced
Cooked rice, for serving
Instructions
In a small bowl, whisk together beef broth, soy sauce, brown sugar, cornstarch, rice vinegar, ginger, and garlic. Set aside.
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add sliced beef and cook until browned, about 3-4 minutes. Remove beef from skillet and set aside.
Add the remaining 1 tablespoon of vegetable oil to the skillet. Add broccoli florets and stir-fry for 3-5 minutes, until tender-crisp.
Return the cooked beef to the skillet with the broccoli.
Pour the prepared sauce over the beef and broccoli. Bring to a simmer, stirring constantly, until the sauce thickens, about 1-2 minutes.
Serve immediately over cooked rice.
Notes
For extra flavor, marinate the beef in a tablespoon of soy sauce and a teaspoon of cornstarch for 15 minutes before cooking.
Adjust the amount of brown sugar to your preference for a sweeter or more savory sauce.
You can add other vegetables like carrots or bell peppers for more variety.
