- 4 (6 ounce) salmon fillets
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can crushed tomatoes
- 1/2 cup heavy cream
- 1/4 cup fresh basil, chopped
- Preheat your broiler. Line a baking sheet with foil and lightly grease.
- Brush salmon fillets with olive oil and sprinkle with salt and pepper. Place on the prepared baking sheet.
- Broil salmon for 8-12 minutes, or until cooked through and flaky.
- While salmon broils, melt butter in a medium saucepan over medium heat. Add onion and cook until softened, about 5 minutes.
- Stir in garlic and cook for 1 minute more until fragrant.
- Add crushed tomatoes to the saucepan. Bring to a simmer and cook for 5 minutes.
- Stir in heavy cream and basil. Season with salt and pepper to taste.
- Serve the broiled salmon with the tomato cream sauce over the top.
Notes
- Adjust cooking time for salmon based on thickness.
- For a spicier sauce, add a pinch of red pepper flakes.
- Fresh herbs like parsley or oregano also work well.
