Brookies are a delicious hybrid dessert combining the fudginess of brownies with the chewiness of cookies. They offer the best of both worlds in one bite.

  • 1/2 cup (113g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup (60g) all-purpose flour
  • 1/4 cup (22g) unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (85g) chocolate chips
  • 1/2 cup (100g) light brown sugar, packed
  • 1/4 cup (56g) unsalted butter, softened
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 cup (120g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (85g) chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper.
  2. For the brownie layer: In a medium bowl, whisk together melted butter and granulated sugar.
  3. Whisk in eggs one at a time, then stir in vanilla extract.
  4. In a separate small bowl, whisk together flour, cocoa powder, baking powder, and salt.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined. Fold in chocolate chips.
  6. Spread the brownie batter evenly into the prepared baking pan.
  7. For the cookie layer: In a separate medium bowl, cream together softened butter and light brown sugar until light and fluffy.
  8. Beat in the egg yolk and vanilla extract.
  9. In a separate small bowl, whisk together flour, baking soda, and salt.
  10. Gradually add dry ingredients to wet ingredients, mixing until just combined. Fold in chocolate chips.
  11. Drop spoonfuls of cookie dough over the brownie layer, spreading gently to cover as much as possible.
  12. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  13. Let cool completely in the pan before cutting into squares.

Notes

  • Do not overbake the brookies; they will continue to set as they cool.
  • For a cleaner cut, chill the brookies for at least 30 minutes before slicing.
  • Store brookies in an airtight container at room temperature for up to 3 days.
