1 tablespoon olive oil
2 cloves garlic, minced
1/2 cup vegetable broth
1 (15-ounce) can cannellini beans, rinsed and drained
1/4 teaspoon red pepper flakes (optional)
Salt and black pepper to taste
4 slices rustic bread
1 tablespoon butter, softened
1 clove garlic, halved
Fresh parsley, chopped, for garnish
Instructions
Heat olive oil in a small saucepan over medium heat. Add minced garlic and cook until fragrant, about 30 seconds.
Stir in vegetable broth, cannellini beans, and red pepper flakes (if using). Bring to a simmer, then reduce heat to low and cook for 5-7 minutes, allowing the flavors to meld and the broth to thicken slightly. Season with salt and pepper.
While the beans are simmering, toast the bread slices. You can do this in a toaster, under the broiler, or in a pan with a little butter.
Once toasted, spread softened butter on one side of each bread slice. Rub the cut side of the halved garlic clove over the buttered toast.
Spoon the brothy beans over the garlic toast.
Garnish with fresh chopped parsley, if desired, and serve immediately.
Notes
For extra flavor, you can add a sprig of fresh rosemary or thyme to the beans while they simmer.
Feel free to use other types of white beans, such as great northern beans.
This dish can be made vegetarian by using vegetable broth.
