These Buckeyes are a delicious and easy-to-make no-bake treat. They feature a creamy peanut butter fudge center dipped in rich melted chocolate, resembling the nut from the buckeye tree.

  • 1 1/2 cups creamy peanut butter
  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 12 ounces semi-sweet chocolate chips
  • 2 tablespoons shortening (like Crisco) or coconut oil

Instructions

  1. In a large bowl, cream together the peanut butter and softened butter until smooth.
  2. Gradually add the powdered sugar, mixing until well combined and a stiff dough forms.
  3. Stir in the vanilla extract.
  4. Roll the peanut butter mixture into 1-inch balls. Place them on a baking sheet lined with parchment paper.
  5. Insert a toothpick into the top of each peanut butter ball.
  6. Freeze the peanut butter balls for at least 30 minutes to firm them up.
  7. In a microwave-safe bowl, melt the chocolate chips and shortening (or coconut oil) together. Microwave in 30-second intervals, stirring until smooth.
  8. Holding the toothpick, dip each peanut butter ball into the melted chocolate, leaving a small circle of peanut butter exposed at the top, resembling a buckeye nut.
  9. Place the dipped buckeyes back on the parchment-lined baking sheet.
  10. Refrigerate until the chocolate is set, about 30 minutes. Remove toothpicks before serving.

  • For best results, use creamy peanut butter, not natural peanut butter, as it can be too oily.
