  • 1 pound asparagus, trimmed
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 corn tortillas
  • 1/2 cup adobo sauce (from a can of chipotle peppers)
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup crumbled cojita cheese (optional)

Instructions

  1. Preheat a grill or grill pan to medium-high heat.
  2. Toss the trimmed asparagus with olive oil, salt, and pepper.
  3. Grill the asparagus for 3-5 minutes, turning occasionally, until charred and tender-crisp. Remove from heat and chop into 1-inch pieces.
  4. In a small bowl, whisk together the adobo sauce, mayonnaise, and lime juice until smooth.
  5. Warm the corn tortillas according to package directions.
  6. Assemble the tacos by placing some charred asparagus in each tortilla.
  7. Drizzle with the creamy adobo sauce.
  8. Garnish with fresh cilantro and crumbled cojita cheese, if desired.

Notes

  • For extra spice, add a pinch of cayenne pepper to the adobo sauce.
  • If you don’t have cojita cheese, feta cheese or a dairy-free alternative works well.
