  • 1 large head broccoli, cut into florets
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces Taleggio cheese, rind removed, cut into 1/2-inch pieces
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh parsley (for garnish, optional)

Instructions

  1. Preheat a large cast iron skillet or heavy-bottomed pan over medium-high heat.
  2. Toss the broccoli florets with olive oil, salt, and pepper in a medium bowl until evenly coated.
  3. Add the seasoned broccoli to the hot skillet in a single layer. Cook for 5-7 minutes, stirring occasionally, until the broccoli is tender-crisp and has charred spots.
  4. Remove the skillet from the heat. Add the Taleggio cheese pieces to the hot broccoli, stirring gently until the cheese begins to melt and coat the florets.
  5. Drizzle with fresh lemon juice.
  6. Transfer the charred broccoli with Taleggio to a serving dish. Garnish with fresh parsley, if desired, and serve immediately.

Notes

  • For extra flavor, you can add a pinch of red pepper flakes with the salt and pepper.
  • If you don’t have Taleggio, fontina or brie can be used as substitutes.
  • Ensure the skillet is hot before adding the broccoli to achieve good charring.
