These cheesy asparagus chicken cutlets are a delicious and easy one-pan meal, perfect for a weeknight dinner. Tender chicken breasts are topped with fresh asparagus, melted mozzarella, and a hint of garlic.

  • 4 boneless, skinless chicken breasts, pounded to 1/2-inch thickness
  • 1 pound fresh asparagus, trimmed
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pat chicken breasts dry with paper towels. Season both sides with garlic powder, salt, and pepper.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear chicken for 3-4 minutes per side, until lightly browned.
  4. Arrange asparagus spears around the chicken in the skillet.
  5. Sprinkle mozzarella cheese over each chicken breast.
  6. Transfer skillet to the preheated oven and bake for 10-15 minutes, or until chicken is cooked through and cheese is melted and bubbly.
  7. Serve immediately.

Notes

  • For extra flavor, you can add a pinch of red pepper flakes to the seasoning.
  • If you don’t have an oven-safe skillet, you can transfer the seared chicken and asparagus to a baking dish before adding cheese and baking.
