Chicken and Asparagus Stir Fry

A quick and flavorful stir-fry featuring tender chicken and crisp asparagus.

Ingredients

  • 1 pound boneless, skinless chicken breast, cut into 1-inch pieces
  • 1 pound asparagus, trimmed and cut into 2-inch pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 1 teaspoon fresh ginger, minced
  • 2 cloves garlic, minced
  • 1/4 cup chicken broth
  • 1 tablespoon vegetable oil
  • Cooked rice, for serving

Instructions

  1. In a medium bowl, combine chicken, 1 tablespoon soy sauce, sesame oil, and cornstarch. Mix well and set aside for 10 minutes.
  2. In a small bowl, whisk together remaining 1 tablespoon soy sauce, ginger, garlic, and chicken broth. Set aside.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken and stir-fry until cooked through and lightly browned, about 5-7 minutes. Remove chicken from skillet and set aside.
  4. Add asparagus to the skillet and stir-fry for 3-5 minutes, until tender-crisp.
  5. Return chicken to the skillet. Pour the soy sauce mixture over the chicken and asparagus. Cook, stirring constantly, until the sauce thickens, about 1-2 minutes.
  6. Serve immediately over cooked rice.

Notes

  • For extra spice, add a pinch of red pepper flakes to the sauce.
  • You can add other vegetables like bell peppers or snap peas.
  • Ensure your wok or skillet is hot before adding ingredients for best stir-fry results.
