1 pound boneless, skinless chicken breast, cut into 1-inch pieces
1 pound asparagus, trimmed and cut into 2-inch pieces
2 tablespoons soy sauce
1 tablespoon sesame oil
1 tablespoon cornstarch
1 teaspoon fresh ginger, minced
2 cloves garlic, minced
1/4 cup chicken broth
1 tablespoon vegetable oil
Cooked rice, for serving
Instructions
In a medium bowl, combine chicken, 1 tablespoon soy sauce, sesame oil, and cornstarch. Mix well and set aside for 10 minutes.
In a small bowl, whisk together remaining 1 tablespoon soy sauce, ginger, garlic, and chicken broth. Set aside.
Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken and stir-fry until cooked through and lightly browned, about 5-7 minutes. Remove chicken from skillet and set aside.
Add asparagus to the skillet and stir-fry for 3-5 minutes, until tender-crisp.
Return chicken to the skillet. Pour the soy sauce mixture over the chicken and asparagus. Cook, stirring constantly, until the sauce thickens, about 1-2 minutes.
Serve immediately over cooked rice.
Notes
For extra spice, add a pinch of red pepper flakes to the sauce.
You can add other vegetables like bell peppers or snap peas.
