A hearty and flavorful chicken taco soup loaded with tender chicken, beans, and spices. Perfect for a quick weeknight meal.

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 can (15 oz) black beans, drained
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 4 cups chicken broth
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until softened, about 3 minutes.
  3. Stir in garlic, cumin, and chili powder. Cook for 1 minute.
  4. Add chicken broth, taco seasoning, chicken breasts, beans, corn, and diced tomatoes.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Remove chicken, shred with two forks, and return to the pot.
  7. Season with salt and pepper to taste.
  8. Serve hot with optional toppings like shredded cheese, sour cream, or avocado.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • Use rotisserie chicken for a quicker version.
  • Add extra vegetables like bell peppers if desired.
