These chickpea fajitas are a quick and flavorful vegetarian meal. Seasoned chickpeas and colorful vegetables are cooked until tender-crisp, then served in warm tortillas.

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, thinly sliced
  • 2 bell peppers (any color), thinly sliced
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • 8 small flour tortillas
  • Optional toppings: salsa, guacamole, sour cream, fresh cilantro

Instructions

  1. Heat olive oil in a large skillet or cast-iron pan over medium-high heat.
  2. Add the sliced onion and bell peppers. Cook, stirring occasionally, for 5-7 minutes, or until vegetables are tender-crisp.
  3. Add the rinsed and drained chickpeas to the skillet.
  4. Sprinkle chili powder, cumin, smoked paprika, garlic powder, salt, and pepper over the chickpeas and vegetables. Stir to combine.
  5. Continue to cook for another 3-5 minutes, stirring occasionally, until the chickpeas are heated through and slightly browned.
  6. While the fajita mixture is cooking, warm the tortillas according to package directions (microwave, oven, or skillet).
  7. Serve the chickpea fajita mixture in warm tortillas with your favorite toppings.

Notes

  • Adjust the amount of chili powder and other spices to your preference for more or less heat.
  • For a spicier kick, add a pinch of cayenne pepper.
  • You can use whole wheat tortillas for a healthier option.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
