A fresh and nutritious salad combining chickpeas, feta cheese, and avocado.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 avocado, diced
  • 100g feta cheese, crumbled
  • 1/2 red onion, finely sliced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • Handful of fresh parsley, chopped

Instructions

  1. In a large bowl, combine chickpeas, avocado, feta, and red onion.
  2. Drizzle with olive oil and lemon juice.
  3. Season with salt and pepper.
  4. Toss gently to mix.
  5. Sprinkle chopped parsley on top.
  6. Serve immediately or chill for 30 minutes.

Notes

  • Use firm avocado to prevent mushiness.
  • Replace feta with vegan cheese if needed.
  • Add cherry tomatoes or cucumber for extra crunch.
