  • 2 tablespoons vegetable oil, divided
  • 2 large eggs, lightly beaten
  • 1 cup cooked chicken, shrimp, or beef, diced (optional)
  • 1 cup frozen mixed vegetables (carrots, peas, corn, green beans)
  • 3 cups cold cooked rice (day-old rice works best)
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon white pepper
  • 2 green onions, sliced (for garnish)

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Pour in the beaten eggs and scramble until fully cooked. Remove the eggs from the skillet and set aside.
  3. Add the remaining 1 tablespoon of vegetable oil to the skillet. If using meat, add it now and cook until browned and cooked through.
  4. Add the frozen mixed vegetables and stir-fry for 3-5 minutes, until tender-crisp.
  5. Add the cold cooked rice to the skillet and break up any clumps with a spoon. Stir-fry for 2-3 minutes, ensuring the rice is heated through.
  6. Stir in the soy sauce, sesame oil, and white pepper. Mix well to combine all ingredients.
  7. Return the cooked eggs to the skillet and fold them into the fried rice.
  8. Garnish with sliced green onions before serving.
