Chocolate chia seed pudding offers a delightful and healthy dessert option. It serves as a great alternative to traditional puddings, providing a rich chocolate flavor with the added benefits of chia seeds.

Ingredients

Scale
  • 1/2 cup almond milk
  • 2 tablespoons chia seeds
  • 1 tablespoon cocoa powder
  • 1 tablespoon maple syrup
  • 1/4 teaspoon vanilla extract (alcohol-free)
  • Pinch of salt

Instructions

  1. In a jar or bowl, combine almond milk, chia seeds, cocoa powder, maple syrup, vanilla extract, and a pinch of salt.
  2. Stir well to ensure all ingredients are fully incorporated and there are no clumps of chia seeds.
  3. Cover the jar or bowl and refrigerate for at least 2 hours, or preferably overnight, to allow the chia seeds to swell and create a pudding-like consistency.
  4. Before serving, stir the pudding again.
  5. Optionally, top with fresh berries, nuts, or a sprinkle of cocoa powder.

Notes

  • For a thicker pudding, add an extra 1/2 tablespoon of chia seeds.
  • Adjust the amount of maple syrup to your preferred sweetness.
  • This pudding can be stored in the refrigerator for up to 3-4 days.
  • Experiment with different milk alternatives like coconut milk or soy milk.
