This pie features a creamy peanut butter filling in a chocolate cookie crust, topped with chocolate ganache and chopped peanuts.

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup granulated sugar
  • 1/4 cup melted butter
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 (8 ounce) container frozen whipped topping, thawed
  • 4 ounces bittersweet chocolate, chopped
  • 1/2 cup heavy cream
  • 1/4 cup chopped peanuts, for garnish

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Combine cookie crumbs, sugar, and melted butter. Press into a 9-inch pie plate.
  3. Bake for 8-10 minutes. Let cool completely.
  4. In a large bowl, beat cream cheese and peanut butter until smooth.
  5. Beat in powdered sugar and vanilla extract.
  6. Fold in whipped topping.
  7. Spoon filling into the cooled crust.
  8. Refrigerate for at least 4 hours, or until set.
  9. For the ganache, heat heavy cream in a small saucepan until simmering.
  10. Remove from heat and stir in chopped chocolate until smooth.
  11. Pour ganache over the chilled pie.
  12. Garnish with chopped peanuts.
  13. Refrigerate until serving.

  • For a richer chocolate flavor, use dark chocolate cookies for the crust.
  • Ensure the cream cheese is at room temperature for a smoother filling.
  • Allow the pie to chill sufficiently for easy slicing.
