200g digestive biscuits
100g unsalted butter, softened
100g granulated sugar
50g unsweetened cocoa powder
50g chopped almonds or pistachios
1 large egg, lightly beaten
1 teaspoon vanilla extract (alcohol-free)
Pinch of salt
Icing sugar, for dusting
Instructions
Crush the digestive biscuits into small pieces using a food processor or by placing them in a bag and crushing with a rolling pin. Do not turn them into a fine powder; some larger chunks are desirable.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
Stir in the cocoa powder, chopped nuts, lightly beaten egg, vanilla extract, and a pinch of salt until well combined.
Add the crushed biscuits to the mixture and mix thoroughly until all the biscuit pieces are coated.
Lay a large piece of parchment paper or plastic wrap on a clean surface. Transfer the chocolate mixture onto the paper.
Shape the mixture into a log, about 6-8 inches long and 2-3 inches in diameter. Roll it tightly in the parchment paper, twisting the ends like a candy wrapper to secure.
Refrigerate for at least 4 hours, or preferably overnight, until firm.
Before serving, unwrap the chocolate salami and dust generously with icing sugar.
Slice into rounds and serve cold.
Notes
You can use other types of plain biscuits or cookies.
Feel free to experiment with different nuts or even dried fruit.
For a richer flavor, you can add a tablespoon of coffee liqueur (alcohol-free alternative) to the mixture.
Store any leftover chocolate salami in an airtight container in the refrigerator for up to one week.
