Chocolate Salami is a rich, no-bake dessert resembling a salami log. It features crushed biscuits, cocoa, nuts, and butter, rolled and chilled for a firm, sliceable treat.

Ingredients

  • 200g digestive biscuits
  • 100g unsalted butter, softened
  • 100g granulated sugar
  • 50g unsweetened cocoa powder
  • 50g chopped almonds or pistachios
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract (alcohol-free)
  • Pinch of salt
  • Icing sugar, for dusting

Instructions

  1. Crush the digestive biscuits into small pieces using a food processor or by placing them in a bag and crushing with a rolling pin. Do not turn them into a fine powder; some larger chunks are desirable.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Stir in the cocoa powder, chopped nuts, lightly beaten egg, vanilla extract, and a pinch of salt until well combined.
  4. Add the crushed biscuits to the mixture and mix thoroughly until all the biscuit pieces are coated.
  5. Lay a large piece of parchment paper or plastic wrap on a clean surface. Transfer the chocolate mixture onto the paper.
  6. Shape the mixture into a log, about 6-8 inches long and 2-3 inches in diameter. Roll it tightly in the parchment paper, twisting the ends like a candy wrapper to secure.
  7. Refrigerate for at least 4 hours, or preferably overnight, until firm.
  8. Before serving, unwrap the chocolate salami and dust generously with icing sugar.
  9. Slice into rounds and serve cold.

Notes

  • You can use other types of plain biscuits or cookies.
  • Feel free to experiment with different nuts or even dried fruit.
  • For a richer flavor, you can add a tablespoon of coffee liqueur (alcohol-free alternative) to the mixture.
  • Store any leftover chocolate salami in an airtight container in the refrigerator for up to one week.
