These Chocolate Whoopie Pies are soft, cake-like cookies filled with a creamy marshmallow frosting. They are a delightful treat for any occasion.

  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 1 cup powdered sugar
  • 1/2 cup vegetable shortening
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, cream together 1/2 cup butter and granulated sugar until light and fluffy. Beat in the egg and 1 teaspoon vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients alternately with 1 cup milk, beginning and ending with the dry ingredients. Mix until just combined.
  5. Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
  6. Bake for 8-10 minutes, or until the edges are set and the centers are slightly soft. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
  7. For the filling: In a medium bowl, beat together powdered sugar, vegetable shortening, 1/4 cup butter, 1 teaspoon vanilla extract, and 2 tablespoons milk until smooth and creamy.
  8. Once the cookies are completely cool, spread a generous amount of filling on the flat side of one cookie and top with another cookie to form a sandwich.
  9. Repeat with the remaining cookies and filling.

  • Do not overmix the cookie dough to ensure a tender texture.
  • Ensure cookies are completely cool before filling to prevent the frosting from melting.
