1/2 cup unsalted butter, softened

1 large egg

1 cup powdered sugar
1/2 cup vegetable shortening
1/4 cup unsalted butter, softened

Instructions
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
In a large bowl, cream together 1/2 cup butter and granulated sugar until light and fluffy. Beat in the egg and 1 teaspoon vanilla extract.
Gradually add the dry ingredients to the wet ingredients alternately with 1 cup milk, beginning and ending with the dry ingredients. Mix until just combined.
Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
Bake for 8-10 minutes, or until the edges are set and the centers are slightly soft. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
For the filling: In a medium bowl, beat together powdered sugar, vegetable shortening, 1/4 cup butter, 1 teaspoon vanilla extract, and 2 tablespoons milk until smooth and creamy.
Once the cookies are completely cool, spread a generous amount of filling on the flat side of one cookie and top with another cookie to form a sandwich.
Repeat with the remaining cookies and filling.
