1 pound beef or chicken, thinly sliced
1 tablespoon vegetable oil
1 cup sliced celery
1 cup sliced carrots
1 cup sliced mushrooms
1 cup bean sprouts
1/2 cup bamboo shoots, sliced
1/2 cup water chestnuts, sliced
1/4 cup soy sauce
1/4 cup chicken or vegetable broth
1 tablespoon cornstarch
1 teaspoon sugar
1/2 teaspoon ginger, grated
Cooked rice or noodles, for serving
Instructions
In a small bowl, whisk together soy sauce, broth, cornstarch, sugar, and ginger. Set aside.
Heat vegetable oil in a large skillet or wok over medium-high heat. Add beef or chicken and stir-fry until browned and cooked through. Remove meat from skillet and set aside.
Add celery and carrots to the skillet and stir-fry for 3-4 minutes until slightly tender-crisp.
Add mushrooms, bean sprouts, bamboo shoots, and water chestnuts to the skillet. Stir-fry for another 2-3 minutes.
Return the cooked meat to the skillet. Pour the prepared sauce over the meat and vegetables.
Stir constantly until the sauce thickens and coats the ingredients, about 1-2 minutes.
Serve immediately over cooked rice or noodles.
Notes
You can customize the vegetables based on your preference.
For extra flavor, add a dash of sesame oil at the end.
