A rich and hearty French stew made with beef, red wine, and vegetables.

Ingredients

  • 2 lbs beef chuck, cut into 2-inch cubes
  • 4 slices bacon, chopped
  • 1 large onion, diced
  • 2 carrots, sliced
  • 3 cloves garlic, minced
  • 2 cups red wine
  • 2 cups beef broth
  • 1 tbsp tomato paste
  • 1 tsp thyme
  • 1 bay leaf
  • 8 oz mushrooms, sliced
  • 2 tbsp flour
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 325°F.
  2. Cook bacon in a large Dutch oven until crispy. Remove and set aside.
  3. Brown beef cubes in bacon fat. Remove and set aside.
  4. Sauté onions, carrots, and garlic until softened.
  5. Stir in flour and tomato paste.
  6. Add wine, beef broth, thyme, and bay leaf. Bring to a simmer.
  7. Return beef and bacon to the pot. Cover and bake for 2.5 hours.
  8. Sauté mushrooms in butter and add to the stew.
  9. Cook uncovered for 30 minutes to thicken.
  10. Season with salt and pepper before serving.

Notes

  • Use a full-bodied red wine like Burgundy or Pinot Noir.
  • For best results, marinate the beef in wine overnight.
  • Serve with crusty bread or mashed potatoes.
