These Coconut Lime Cookies are soft, chewy, and bursting with tropical flavor. They are easy to make and perfect for any occasion.

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup shredded unsweetened coconut
  • 1 tablespoon lime zest
  • 2 tablespoons fresh lime juice
  • 1/2 cup powdered sugar (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in the shredded coconut and lime zest.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet.
  8. Bake for 10-12 minutes, or until the edges are lightly golden.
  9. Remove from oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  10. While cookies are cooling, prepare the glaze: In a small bowl, whisk together the powdered sugar and fresh lime juice until smooth.
  11. Once cookies are completely cool, drizzle with the lime glaze.

Notes

  • For extra lime flavor, add an additional teaspoon of lime zest to the dough.
  • Store cookies in an airtight container at room temperature for up to 3 days.
  • These cookies can be frozen for up to 1 month.
