- 1/2 cup small tapioca pearls
- 2 cups water
- 1 can (13.5 oz) coconut milk
- 1/3 cup sugar
- 1/4 tsp salt
- 1 tsp vanilla extract (alcohol-free)
- Optional: fresh fruit or toasted coconut for garnish
- Soak tapioca pearls in water for 30 minutes, then drain.
- In a saucepan, bring 2 cups of water to a boil. Add soaked tapioca pearls and simmer for 15 minutes, stirring occasionally.
- Reduce heat to low and add coconut milk, sugar, and salt. Stir well.
- Cook for another 10 minutes, stirring frequently, until the mixture thickens.
- Remove from heat and stir in vanilla extract.
- Let it cool slightly before serving. Garnish with fresh fruit or toasted coconut if desired.
Notes
- For a thicker consistency, refrigerate for 2 hours before serving.
- Adjust sugar to taste.
- Stir often to prevent sticking.
