A hearty and nutritious white bean soup that’s easy to make and packed with flavor.

Ingredients

  • 2 cups dried white beans, soaked overnight
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Drain and rinse the soaked white beans.
  2. Heat olive oil in a large pot over medium heat.
  3. Add onion, carrots, and celery. Sauté for 5 minutes.
  4. Add garlic, thyme, and rosemary. Cook for 1 minute.
  5. Pour in vegetable broth and add the white beans.
  6. Bring to a boil, then reduce heat and simmer for 1 hour or until beans are tender.
  7. Season with salt and pepper.
  8. Serve hot.

Notes

  • Soak beans overnight for best results.
  • You can use canned beans for a quicker version.
  • Garnish with fresh parsley if desired.
