1 pound ground beef
1 onion, chopped
2 carrots, peeled and diced
2 celery stalks, diced
1 teaspoon dried thyme
1 teaspoon garlic powder
1 (14.5 ounce) can diced tomatoes, undrained
1 cup beef broth
1 cup frozen peas
1 cup frozen corn
1 (10.75 ounce) can condensed cream of mushroom soup
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup cold butter, cut into small pieces
1/2 cup milk
Instructions
Preheat oven to 375 degrees F (190 degrees C).
Heat olive oil in a large oven-safe skillet over medium heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat.
Stir in onion, carrots, and celery. Cook until softened, about 5-7 minutes.
Add thyme, garlic powder, diced tomatoes, and beef broth. Bring to a simmer.
Stir in frozen peas and corn. Remove from heat.
In a medium bowl, whisk together flour, baking powder, and salt for the dumplings.
Cut in cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
Pour in milk and stir until just combined to form a soft dough.
Drop spoonfuls of dumpling dough over the hot beef mixture in the skillet.
Bake for 20-25 minutes, or until the dumplings are golden brown and cooked through.
