Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup beef broth
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup cold butter, cut into small pieces
  • 1/2 cup milk

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Heat olive oil in a large oven-safe skillet over medium heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat.
  3. Stir in onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  4. Add thyme, garlic powder, diced tomatoes, and beef broth. Bring to a simmer.
  5. Stir in frozen peas and corn. Remove from heat.
  6. In a medium bowl, whisk together flour, baking powder, and salt for the dumplings.
  7. Cut in cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  8. Pour in milk and stir until just combined to form a soft dough.
  9. Drop spoonfuls of dumpling dough over the hot beef mixture in the skillet.
  10. Bake for 20-25 minutes, or until the dumplings are golden brown and cooked through.
  11. Let stand for a few minutes before serving.

Notes

  • You can substitute ground beef with ground lamb or turkey.
  • Feel free to add other vegetables like potatoes or green beans.
  • A sprinkle of fresh parsley before serving adds a nice touch.
