A quick and refreshing Asian-style cucumber salad with a tangy dressing. Perfect as a side dish or light snack.

Ingredients

  • 2 medium cucumbers, thinly sliced
  • 1/4 cup rice vinegar
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • 1 tsp grated ginger
  • 1 clove garlic, minced
  • 1 tbsp toasted sesame seeds
  • 1/2 tsp red pepper flakes
  • 2 green onions, thinly sliced

Instructions

  1. In a bowl, whisk together rice vinegar, soy sauce, sesame oil, honey, ginger, and garlic.
  2. Add cucumber slices to the bowl and toss to coat evenly.
  3. Cover and refrigerate for at least 30 minutes.
  4. Before serving, sprinkle with sesame seeds, red pepper flakes, and green onions.
  5. Toss again lightly and serve chilled.
