Simple and delicious blueberry muffins perfect for breakfast or snacks.

  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1/3 cup vegetable oil
  • 1 egg
  • 1/3 cup milk
  • 1 cup fresh blueberries

Instructions

  1. Preheat oven to 400°F (200°C). Grease muffin cups or line with muffin liners.
  2. Combine flour, sugar, salt, and baking powder in a large bowl.
  3. Mix vegetable oil, egg, and milk in a separate bowl.
  4. Pour wet ingredients into dry ingredients and stir until just combined.
  5. Fold in blueberries gently.
  6. Fill muffin cups 2/3 full with batter.
  7. Bake for 20-25 minutes or until golden brown.

Notes

  • Do not overmix the batter to keep muffins tender.
  • Use frozen blueberries if fresh ones are unavailable.
  • Store muffins in an airtight container for up to 3 days.
