Coconut rice is a simple yet flavorful side dish. It pairs well with many main courses.

Ingredients

Scale
  • 1 cup white rice (jasmine or basmati recommended)
  • 1 cup coconut milk (full-fat or light)
  • 1 cup water
  • 1/2 teaspoon salt
  • 1 tablespoon sugar (optional)
  • 1 tablespoon shredded coconut (for garnish, optional)

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. Combine the rinsed rice, coconut milk, water, salt, and sugar (if using) in a medium saucepan.
  3. Bring the mixture to a boil over medium-high heat.
  4. Once boiling, reduce the heat to low, cover the saucepan tightly, and simmer for 15-20 minutes, or until all the liquid is absorbed and the rice is tender.
  5. Remove the saucepan from the heat and let it sit, covered, for another 5-10 minutes.
  6. Fluff the rice gently with a fork.
  7. Garnish with shredded coconut if desired and serve hot.

Notes

  • For extra flavor, you can add a pandan leaf or a stick of cinnamon to the pot while cooking.
  • Adjust the amount of salt and sugar to your taste.
  • Do not lift the lid while the rice is simmering.
  • Use a heavy-bottomed saucepan to prevent burning.
