1 pound long pasta (spaghetti, linguine, fettuccine)
1/4 cup soy sauce
2 tablespoons rice vinegar
1 tablespoon sesame oil
1 tablespoon brown sugar
1 tablespoon fresh ginger, grated
1 clove garlic, minced
1/4 teaspoon red pepper flakes (optional)
2 tablespoons sesame seeds, toasted
2 green onions, sliced (for garnish)
Instructions
Cook the pasta according to package directions. Drain and rinse with cold water to prevent sticking.
While the pasta cooks, whisk together the soy sauce, rice vinegar, sesame oil, brown sugar, grated ginger, minced garlic, and red pepper flakes (if using) in a large bowl.
Add the cooled pasta to the bowl with the sauce. Toss to coat evenly.
Stir in the toasted sesame seeds.
Garnish with sliced green onions before serving.
Notes
For a creamier sauce, add 1-2 tablespoons of peanut butter to the dressing.
You can add cooked chicken, tofu, or vegetables to make this a more substantial meal.
Store leftover noodles in an airtight container in the refrigerator for up to 3 days.
