  • 1 large head green cabbage (about 2 1/2 pounds)
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 cup shredded carrots
  • 1/2 cup chopped water chestnuts
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro (for garnish, optional)

Instructions

  1. Bring a large pot of salted water to a boil. Carefully remove the outer leaves from the cabbage, trimming the thick stem ends. Blanch the cabbage leaves in boiling water for 3-5 minutes, or until pliable. Drain and let cool.
  2. In a large skillet, heat olive oil over medium heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  3. Add onion, garlic, and ginger to the skillet. Cook for 5-7 minutes, or until the onion softens.
  4. Stir in shredded carrots and water chestnuts. Cook for another 3-5 minutes.
  5. Pour in soy sauce, rice vinegar, and sesame oil. Season with black pepper. Mix well and remove from heat.
  6. Preheat oven to 375°F (190°C).
  7. Lay a blanched cabbage leaf flat. Place about 1/4 cup of the beef mixture near the stem end. Fold in the sides of the cabbage leaf, then roll it up tightly from the bottom. Repeat with remaining cabbage leaves and filling.
  8. Arrange the cabbage rolls seam-side down in a baking dish.
  9. Bake for 20-25 minutes, or until heated through and the cabbage is tender.
  10. Garnish with fresh cilantro, if desired, before serving.

Notes

  • You can use ground lamb or turkey instead of ground beef.
  • For a spicier kick, add a pinch of red pepper flakes to the filling.
  • Serve with additional soy sauce or a sweet chili dipping sauce.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
