A delicious and healthy pizza recipe featuring fresh asparagus, potatoes, and a flavorful garlic herb sauce.

  • 1 pound yukon gold potatoes, very thinly sliced
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound asparagus, trimmed and cut into 1-inch pieces
  • 1 (13.8 ounce) can refrigerated pizza crust
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss sliced potatoes with olive oil, garlic, oregano, basil, red pepper flakes, salt, and pepper.
  3. Spread potatoes in a single layer on a baking sheet. Roast for 15 minutes, stirring halfway through.
  4. Add asparagus to the baking sheet with the potatoes. Roast for another 10 minutes, or until vegetables are tender.
  5. Unroll pizza crust onto a lightly floured surface or a pizza pan.
  6. Spread the roasted potato and asparagus mixture evenly over the pizza crust.
  7. Sprinkle with mozzarella and Parmesan cheeses.
  8. Bake for 12-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
  9. Slice and serve hot.

Notes

  • For a crispier crust, pre-bake the pizza crust for 5 minutes before adding toppings.
  • You can add other vegetables like cherry tomatoes or red onion.
  • A sprinkle of fresh parsley or chives before serving adds a nice touch.
