This recipe makes a healthy and delicious fish taco salad that is perfect for a light meal. It features flaky white fish, fresh vegetables, and a creamy avocado dressing.

  • 1 pound firm white fish fillets (cod, tilapia, or halibut)
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • 6 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup corn kernels (fresh or frozen and thawed)
  • 1/4 cup chopped fresh cilantro
  • For the Avocado Dressing:
  • 1 ripe avocado, pitted and peeled
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons lime juice
  • 1 clove garlic, minced
  • 2 tablespoons water (or more, for desired consistency)
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Pat fish fillets dry with paper towels. In a small bowl, combine olive oil, chili powder, cumin, garlic powder, salt, and pepper. Rub the mixture evenly over both sides of the fish.
  3. Place fish on the prepared baking sheet. Bake for 10-12 minutes, or until the fish is opaque and flakes easily with a fork.
  4. While the fish bakes, prepare the avocado dressing. In a blender or food processor, combine avocado, Greek yogurt, lime juice, minced garlic, water, salt, and pepper. Blend until smooth and creamy. Add more water if needed to reach your desired consistency.
  5. In a large bowl, combine mixed greens, cherry tomatoes, red onion, corn, and cilantro.
  6. Once the fish is cooked, flake it into bite-sized pieces using a fork.
  7. Divide the salad mixture among serving plates. Top with flaked fish.
  8. Drizzle generously with avocado dressing before serving.

Notes

  • For extra crunch, add some crushed tortilla chips or toasted pumpkin seeds.
  • You can prepare the dressing a day in advance and store it in an airtight container in the refrigerator.
  • Adjust the spice level of the fish by adding more or less chili powder.
  • This recipe is also great with grilled or pan-fried fish.
