2 tablespoons olive oil, divided
1 teaspoon dried oregano
1/2 teaspoon garlic powder

1 cucumber, diced
1 cup cherry tomatoes, halved
1/2 red onion, thinly sliced
1/4 cup Kalamata olives, halved

Instructions
In a medium bowl, toss the chicken pieces with 1 tablespoon olive oil, oregano, garlic powder, salt, and pepper.
Heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes, or until browned and cooked through.
While the chicken cooks, prepare the tahini feta dressing. In a small bowl, whisk together the tahini, lemon juice, water, minced garlic, and a pinch of salt until smooth. Add the crumbled feta cheese and stir gently to combine.
Assemble the bowls: Divide the cooked quinoa or rice among four bowls. Top with the cooked chicken, diced cucumber, halved cherry tomatoes, sliced red onion, and Kalamata olives.
