This green banana curry is a flavorful and hearty dish, perfect for a satisfying meal. It combines the unique texture of green bananas with aromatic spices and coconut milk for a rich and creamy sauce.

  • 1 tablespoon coconut oil
  • 2 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 (1-inch) piece fresh ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon cayenne pepper (or to taste)
  • 1 pound green bananas, peeled and cut into 1-inch chunks
  • 1 (13.5 ounce) can full-fat coconut milk
  • 1/2 cup vegetable broth
  • 1 tablespoon fresh lime juice
  • Salt and black pepper to taste
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Heat coconut oil in a large pot or Dutch oven over medium heat. Add garlic and onion, and cook until softened, about 5 minutes.
  2. Stir in ginger, cumin, coriander, turmeric, and cayenne pepper. Cook for 1 minute more, until fragrant.
  3. Add the green banana chunks, coconut milk, and vegetable broth to the pot. Bring to a simmer, then reduce heat to low, cover, and cook for 20-25 minutes, or until the bananas are tender.
  4. Stir in fresh lime juice. Season with salt and black pepper to taste.
  5. Garnish with fresh cilantro before serving.

Notes

  • To easily peel green bananas, cut off both ends, make a shallow slit along the length of the banana, and then carefully peel away the skin.
  • If you prefer a thicker curry, you can simmer it uncovered for a few extra minutes at the end.
  • Serve this curry with rice or flatbread.
