Ingredients
Scale
1 pound ground beef
1 tablespoon olive oil
1 head broccoli, cut into florets
1/2 cup beef broth
2 tablespoons soy sauce
1 tablespoon cornstarch
1 teaspoon minced garlic
1/2 teaspoon grated fresh ginger
1/4 teaspoon black pepper
Cooked rice, for serving (optional)
Instructions
In a large skillet, cook ground beef over medium heat until browned. Drain any excess fat.
Add olive oil and broccoli florets to the skillet. Cook for 5-7 minutes, stirring occasionally, until broccoli is tender-crisp.
In a small bowl, whisk together beef broth, soy sauce, cornstarch, minced garlic, grated ginger, and black pepper.
Pour the sauce over the beef and broccoli in the skillet. Stir constantly until the sauce thickens and coats the beef and broccoli, about 1-2 minutes.
Serve hot, optionally over cooked rice.
Notes
For extra spice, add a pinch of red pepper flakes to the sauce.
You can substitute other vegetables like bell peppers or carrots for some of the broccoli.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
