  • 1/2 cup sliced carrots
  • 1/2 cup broccoli florets
  • 1/4 cup soy sauce

  • 1 teaspoon fresh ginger, grated
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 cups cooked brown rice, for serving

Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Add ground chicken and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  3. Stir in onion and garlic; cook until softened, about 3 minutes.
  4. Add carrots and broccoli; cook for 5-7 minutes, or until vegetables are tender-crisp.
  5. In a small bowl, whisk together soy sauce, honey, ginger, and red pepper flakes (if using).
  6. Pour sauce over chicken and vegetables. Cook for 2-3 minutes, stirring constantly, until sauce thickens slightly.
