A fresh and flavorful pasta salad inspired by Mexican street corn, combining sweet corn, creamy dressing, and a hint of spice.

Ingredients

  • 8 oz pasta (any short shape)
  • 2 cups corn kernels (fresh or frozen)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/4 cup chopped cilantro
  • 1/4 cup crumbled cotija cheese
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and let cool.
  2. In a large bowl, mix mayonnaise, sour cream, lime juice, chili powder, and smoked paprika.
  3. Add cooked pasta, corn, cilantro, and cotija cheese to the bowl. Toss to coat evenly.
  4. Season with salt and pepper. Serve chilled.

Notes

  • Use grilled corn for extra smoky flavor.
  • Substitute feta cheese if cotija is unavailable.
  • Best served fresh but can be refrigerated for up to 2 days.
