A hearty and healthy vegetable soup packed with fresh ingredients and rich flavors.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 2 cups water
  • 1 can diced tomatoes
  • 1 cup green beans, chopped
  • 1 zucchini, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes.
  3. Stir in garlic and cook for 1 minute.
  4. Pour in vegetable broth and water. Bring to a boil.
  5. Add diced tomatoes, green beans, zucchini, thyme, and oregano.
  6. Reduce heat and simmer for 20 minutes.
  7. Season with salt and pepper.
  8. Serve hot and enjoy.

Notes

  • You can add other vegetables like potatoes or peas.
  • Store leftovers in an airtight container for up to 3 days.
