  • 2 cups cooked chicken breast, shredded
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 1 cup milk
  • 1 cup frozen peas
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes until softened.
  3. Stir in garlic, thyme, and rosemary. Cook for 1 minute until fragrant.
  4. Sprinkle flour over the vegetables. Stir well to coat.
  5. Gradually pour in chicken broth while stirring to avoid lumps.
  6. Add milk and shredded chicken. Bring to a simmer.
  7. Stir in frozen peas. Cook for 5 minutes until heated through.
  8. Season with salt and pepper. Serve hot.
