A hearty high-protein soup packed with chicken and vegetables.

Ingredients

  • 2 chicken breasts (cubed)
  • 1 cup carrots (chopped)
  • 1 cup celery (chopped)
  • 1 onion (diced)
  • 3 cloves garlic (minced)
  • 4 cups chicken broth
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onions and garlic, cook until soft.
  3. Add chicken and cook until browned.
  4. Stir in carrots and celery.
  5. Pour in chicken broth.
  6. Add salt, pepper, and thyme.
  7. Simmer for 20 minutes.
  8. Serve hot.
