This Chow Mein recipe delivers a delightful blend of tender noodles, crisp vegetables, and savory sauce. It is a quick and satisfying meal perfect for any weeknight.

  • 8 ounces egg noodles or lo mein noodles
  • 2 tablespoons vegetable oil, divided
  • 8 ounces boneless, skinless chicken breast, thinly sliced
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup sliced cabbage
  • 1/2 cup sliced yellow onion
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup soy sauce
  • 1 tablespoon oyster sauce (or vegetarian stir-fry sauce)
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sugar
  • 1/4 cup chicken broth or vegetable broth
  • 2 tablespoons cornstarch mixed with 2 tablespoons water (slurry)

Instructions

  1. Cook noodles according to package directions. Drain and set aside.
  2. Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
  3. Add remaining 1 tablespoon vegetable oil to the skillet. Add carrots, celery, cabbage, and onion. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
  4. Add minced garlic and grated ginger. Stir-fry for 1 minute until fragrant.
  5. In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, sugar, and broth. Pour the sauce mixture over the vegetables.
  6. Bring the sauce to a simmer, then stir in the cornstarch slurry. Cook, stirring constantly, until the sauce thickens.
  7. Add the cooked noodles and chicken back to the skillet. Toss everything together until well combined and heated through.
  8. Serve immediately.

Notes

  • Adjust the amount of soy sauce to your preference.
  • Feel free to add other vegetables like bell peppers or mushrooms.
  • For extra spice, add a pinch of red pepper flakes.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
