Homemade Loaded Potato Soup

A creamy and hearty homemade potato soup loaded with toppings for a comforting meal.

Ingredients

  • 4 large russet potatoes, peeled and diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 6 strips bacon, cooked and crumbled
  • 2 tbsp butter
  • Salt and pepper to taste
  • 2 green onions, sliced (for garnish)

Instructions

  1. Melt butter in a large pot over medium heat. Add onions and cook until soft.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Add diced potatoes and broth. Bring to a boil, then reduce heat and simmer for 15 minutes or until potatoes are tender.
  4. Use a potato masher to partially mash the potatoes for a thicker texture.
  5. Stir in heavy cream, sour cream, and shredded cheese until melted and smooth.
  6. Season with salt and pepper to taste.
  7. Serve hot, topped with crumbled bacon and sliced green onions.

Notes

  • For a smoother soup, blend half of it before adding cream and cheese.
  • Substitute heavy cream with milk for a lighter version.
  • Store leftovers in the fridge for up to 3 days. Reheat gently.
