- 2 boneless chicken breasts
- 1/4 cup hot honey
- 1 cup cooked rice or quinoa
- 1/2 cup sliced bell peppers
- 1/2 cup shredded carrots
- 1/4 cup chopped cilantro
- 1 tbsp olive oil
- Salt and pepper to taste
- Preheat oven to 375°F (190°C).
- Coat chicken breasts with olive oil, salt, and pepper. Bake for 25 minutes or until fully cooked.
- Brush hot honey over the chicken during the last 5 minutes of baking.
- Slice chicken into strips.
- Assemble the bowl with rice or quinoa, sliced chicken, bell peppers, and shredded carrots.
