A spicy and sweet chicken bowl with a mix of fresh vegetables and grains.

Ingredients

  • 2 boneless chicken breasts
  • 1/4 cup hot honey
  • 1 cup cooked rice or quinoa
  • 1/2 cup sliced bell peppers
  • 1/2 cup shredded carrots
  • 1/4 cup chopped cilantro
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Coat chicken breasts with olive oil, salt, and pepper. Bake for 25 minutes or until fully cooked.
  3. Brush hot honey over the chicken during the last 5 minutes of baking.
  4. Slice chicken into strips.
  5. Assemble the bowl with rice or quinoa, sliced chicken, bell peppers, and shredded carrots.
  6. Drizzle with extra hot honey if desired and garnish with cilantro.

Notes

  • Adjust honey spiciness to your preference.
  • Swap rice for quinoa for extra protein.
  • Add avocado or pickled onions for extra flavor.
