This Hot Honey Sweet Potato Beef Bowl combines savory beef with sweet and spicy hot honey glazed sweet potatoes for a flavorful and satisfying meal.

Ingredients

Scale
  • 1 pound ground beef
  • 2 medium sweet potatoes, peeled and diced
  • 2 tablespoons olive oil
  • 1/4 cup hot honey
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1/4 cup chopped fresh cilantro (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss diced sweet potatoes with 1 tablespoon olive oil, smoked paprika, garlic powder, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until tender and slightly caramelized.
  3. While sweet potatoes are roasting, heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned and cooked through. Drain any excess fat.
  4. In a small bowl, whisk together hot honey and apple cider vinegar.
  5. Add the hot honey mixture to the cooked ground beef and stir to coat. Cook for 2-3 minutes, allowing the sauce to thicken slightly.
  6. Divide the roasted sweet potatoes among serving bowls. Top with the hot honey beef.
  7. Garnish with fresh cilantro before serving.

Notes

  • Adjust the amount of hot honey to your preferred level of spice.
  • For extra vegetables, add roasted broccoli or bell peppers to the bowl.
  • Serve with a dollop of Greek yogurt or sour cream for a cooling contrast.
