1 pound ground beef
2 medium sweet potatoes, peeled and diced
2 tablespoons olive oil
1/4 cup hot honey
1 tablespoon apple cider vinegar
1 teaspoon smoked paprika
1/2 teaspoon garlic powder

1/4 cup chopped fresh cilantro (for garnish)
Instructions
Preheat oven to 400°F (200°C).
Toss diced sweet potatoes with 1 tablespoon olive oil, smoked paprika, garlic powder, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until tender and slightly caramelized.
While sweet potatoes are roasting, heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned and cooked through. Drain any excess fat.
In a small bowl, whisk together hot honey and apple cider vinegar.
Add the hot honey mixture to the cooked ground beef and stir to coat. Cook for 2-3 minutes, allowing the sauce to thicken slightly.
Divide the roasted sweet potatoes among serving bowls. Top with the hot honey beef.
Garnish with fresh cilantro before serving.
