A comforting Italian soup known for its healing properties, often made with chicken, vegetables, and pasta.

  • 1 whole chicken (about 34 lbs)
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 8 cups chicken broth
  • 1 cup small pasta (like ditalini or orzo)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 1/2 cup fresh parsley, chopped
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, celery, and garlic. Sauté for 5 minutes.
  3. Add chicken, broth, salt, pepper, and oregano. Bring to a boil.
  4. Reduce heat and simmer for 45 minutes, or until chicken is cooked.
  5. Remove chicken, shred the meat, and return it to the pot.
  6. Add pasta and cook for 8-10 minutes until tender.
  7. Stir in parsley and serve hot.

Notes

  • For extra flavor, add a Parmesan rind while simmering.
  • Use gluten-free pasta if needed.
  • Store leftovers in the fridge for up to 3 days.
