1 cup shelled edamame, cooked and cooled
1 ripe avocado, mashed
2 tablespoons fresh lemon juice
1 tablespoon chopped fresh parsley
1/4 teaspoon salt
1/8 teaspoon black pepper
4 slices whole wheat bread
Lettuce leaves (optional)
Tomato slices (optional)
Instructions
In a medium bowl, combine the cooked edamame, mashed avocado, lemon juice, parsley, salt, and pepper. Mix well until everything is evenly combined.
Spread the edamame-avocado mixture evenly over two slices of whole wheat bread.
Top with lettuce leaves and tomato slices, if desired.
Place the remaining two slices of bread on top to form sandwiches.
Cut the sandwiches in half and serve immediately.
Notes
