A hearty and nutritious lentil soup that’s easy to make and packed with flavor.

Ingredients

  • 1 cup dried lentils, rinsed
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
  3. Stir in garlic, cumin, and paprika. Cook for 1 minute.
  4. Add lentils, vegetable broth, and diced tomatoes. Bring to a boil.
  5. Reduce heat and simmer for 25-30 minutes until lentils are tender.
  6. Season with salt and pepper.
  7. Serve hot.

Notes

  • Use green or brown lentils for best results.
  • Add a splash of lemon juice for extra flavor.
  • Store leftovers in the fridge for up to 3 days.
