- 1 cup dried lentils, rinsed
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 4 cups vegetable broth
- 1 can (14 oz) diced tomatoes
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tbsp olive oil
- Salt and pepper to taste
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened, about 5 minutes.
- Stir in garlic, cumin, and paprika. Cook for 1 minute.
- Add lentils, vegetable broth, and diced tomatoes. Bring to a boil.
- Reduce heat and simmer for 25-30 minutes until lentils are tender.
- Season with salt and pepper.
- Serve hot.
Notes
- Use green or brown lentils for best results.
- Add a splash of lemon juice for extra flavor.
